I love chocolate cake. It has to be one of my favorite sweets in the world. Luckily, my husband shares the same opinion. Well, kinda. We recently discussed what makes the best chocolate cake. I said something decadent with layers of different chocolate textures. He said the traditional frosting and cake combo like grandma used to make.
To show him what I meant, I made this truffle cake with my favorite things. A moist chocolate cake layered with a rich chocolate mousse. The whole thing is sealed in with a semi-sweet chocolate ganache frosting. Cocoa powder dusts around the edges and homemade truffles finish the top. (The look was inspired by Sprinkle Bakes’ crepe cake. She’s amazing!)
We haven’t had an official test taste between the two versions, but Hubs did concede this one was pretty good.
What kind of chocolate cake do you like the most? Grandma’s chocolate cake or an updated version like Chocolate Truffle?

Ganache frosting isn’t that hard to do. After you melt the chocolate, let it come to room temperature before working with it. Still do a crumb coating, but then it goes on pretty smooth, like buttercream. Good luck!
